We sell our meat products locally throughout the south central portion of Minnesota.  Our meat is processed at a state-equal-to-federal butchering facility in New Prague, MN.  Because we do not use a USDA facility, we are not able to ship our meat across state lines.  All meat purchased in the state of MN must be picked up at our farm store (or at our butcher if buying by the quarter or half animal).

 

 

Purchasing by individual meat package:
You can purchase our beefalo meat in individually wrapped packages from our farm store located in Elysian, MN. You can get the following: roasts, steaks (ribeye, porterhouse, t-bone, and sirloin), burger, pre-made quarter-pounder patties. We also have beefalo summer sausage, snack sticks and jerky available.

You can purchase our Red Wattle pork meat in individually wrapped packages from our farm store located in Elysian, MN. You can get the following: burger, pre-made patties, pork chops, pork steaks, pork roasts, and bacon, ring bologna, farmer sausage, all pork weiners, brats, and ribs - both country style and spare.

We also sell whole roasting chickens,heritage breed turkeys, ducks and geese during the fall months through early winter.  These animals are free range and receive no antibiotics.  If interested in ordering, please contact us for details.

Purchasing by quarter or half:

You can purchase our beefalo by the quarter, half, or whole animal (all quarters sold as split side). Our Red Wattle pork is also available by the half or whole animal. Here’s how it works:
You print out the order form from our Order Form Page and mail us a non-refundable deposit (check only) for $75. per quarter beefalo (or $75. per half of Red Wattle hog) to hold your order. Once we have your deposit and we have an entire animal sold, we will make an appointment with our butcher. One week prior to the appointment date, we will send you a notice giving you the appointment date, and a range of dates for you to contact the butcher to let them know how you want your meat cut up.

The day after the animal goes into the butcher, we will obtain the hanging weight and send you an invoice for the meat. Payment must be received within 7 days of the invoice date. When the meat is ready for pickup (generally 2 – 3 weeks depending on the processing) we will contact you to let you know that you can pick it up. When you pick up your meat at the butcher shop, you will need to pay the butcher for his processing fees. You will not be allowed to pick up your meat unless it is completely paid for (our fee and the butcher’s fee).

Pricing:   Our current pricing and availability as of 2/4/12 is as follows:

Beefalo (Steak animal) We have .50 beefalo that will be available in April 2012 at $2.85 / lb. HW. (We have already sold 2.5)   A $75 deposit is required for each quarter ordered.

Beefalo (Burger animal)  At this time, we do not have burger beefalo animals available.   Please check back in the summer of 2012.  The price is $2.25/lb. hanging weight.   A $75 deposit is required for each quarter ordered.

Red Wattle Pigs We will have available:  1 pig for Apr/May, 2 pigs for May at a price of $2.15/lb. hanging weight. A $75 deposit is required for each half ordered.

Free-range Chickens  We still have some roasting chickens available through our farm store.  (avg. finished weight 4-5 lbs.).  Please call ahead to make sure we haven't sold out before you stop by to buy.  The price is $2.90/lb. finished weight.

Heritage breed Turkeys   We are sold out of turkeys at this time. They sold for $3.25/lb. finished weight. (Avg. weight 10 lbs.)

Roasting Ducks   We are sold out of ducks at this time. They sold for $4.95/lb. finished weight. (Avg. weight 4 lbs.)

Domestic Geese   We are sold out of geese at this time.  They sold for $4.95/lb. finished weight. (Avg. weight 7 lbs.)

Processing fees for beefalo, and Red Wattle pork (paid to butcher) are currently approximately $0.62 - $0.90 per lb. hanging weight, and may be higher depending on the type of processing you have done.  (Example: extra charges apply for having sausage or jerky made.)   There are no processing fees on the poultry.

Approximate hanging weights are:

Beefalo (steak animal) quarter – 125 - 190 lbs.
Beefalo (burger animal) quarter -- 150 - 230 lbs.
Pig half – 80 - 100 lbs.
Please note: Hanging weights vary depending on the age, sex and natural variability of each animal.

Please note that the finished weight (that which you bring home) is approximately 50 – 65% of the hanging weight depending on how you have your meat processed.  Things like stew meat and jerky will greatly decrease the amount of finished weight you will receive from the animal.  Finished weights for burger only animals are usually around 50% of the hanging weight.  Finished weights for steak animals usually run around 60-65% of hanging weight.

 

 
 
 

Definitions: Steak animal – you can get burger, steaks and roasts from this type of animal.  
Burger animal – you can only get burger from this type of animal.

Split side – you get some of the meat from the front half of the animal and some of the meat from the back half of the animal.

Ordering: To place a quarters/halves order, please go to our Order Form page, print it out, complete it and mail it to us along with your non-refundable deposit check.  Please note we do not accept phone ordersWe will need your full name, mailing address, physical address if using a P.O. box, and a phone number where you can be reached.  We will also need to know what type and quantity of animal you wish to order.  Then, on the day that your place your order, you will need to mail us a non-refundable deposit check to hold your order.  Please mail your check made payable to:  Meyer Beefalo Farm,  47742 – 241st Avenue,  Elysian, MN  56028.   If you have any questions, please feel free to call us.  We will be glad to answer any and all questions.
